Makes: 10 cookies
300g rolled oats
125g Wake vanilla builder protein powder
1/4 teaspoon bicarbonate of soda
1 pinch salt
1/2 teaspoon ground cinnamon (optional)
1/2 teaspoon vanilla extract
250g unsweetened apple sauce
1 large egg
4 tablespoons raisins (optional)

Grind oats in a food processor until the consistency of flour. Combine the oat flour with protein powder, bicarb, salt and cinnamon. Set aside.
Whisk together the apple sauce, egg and vanilla. Add to the dry ingredients and mix well. Fold in the raisins, if using.
Line a baking tray with parchment and drop the cookie dough onto the tray. For large cookies, use a ping-pong sized ball of dough for each cookie.
Bake in a preheated 190 C / Gas 5 oven for 6 to 8 minutes. Don’t overbake. Leave for 5 minutes to cool on the tray, then cool completely on a wire rack.
The dough will be a little watery, don’t worry its supposed to be like that. You can remove the protein powder, but add the equivalent of oats. As written each cookie contains 112 kcal, 13g carbs, 1g fat, 8g protein, 9g fibre.
